If you go to stay in Trujillo, a nice medieval town, then it is hard to imagine there is a nicer place to stay than the Parador. I have stayed in a number of these, and like the others, this is an old building which has been modernised - in this case a former convent. Don't let that put you off - the building is superbly comfortable - our room had a separate sitting room, a jacuzzi and a separate shower and a separate toilet - it was more like a suite.
The food at breakfast was good, with a wide range available. The only reason I have not given full marks is because on 2 days we were there, they had run of of fresh bread at 9:30 (breakfast goes to 11), and on one day milk as well. The milk was rectified quickly, but on one day fresh bread never turned up. The staff was generally very pleasant, perhaps not surprisingly only a few had some English. We gained the impression that breakfast and dinner would have run much better with a few more staff
The Parador is a great place to stay, and without hesitation I would stay there again, but it does need a few more staff to be as good as some of the others I have stayed in
